Healthy New Year #1- Carrots
Did you know that carrots have tremendous health benefits? As many are looking for health improvement strategies for the new year, carrots are a great start. Carrots are full of beta-carotine, which is converted to vitamin A by your body. Proven health benefits from beta-carotine in your diet include improved vision, improved skin, anti-aging properties, decreased risk of lung, breast and colon cancer, decreased risk of heart disease and stroke prevention. Hmmm...may explain why Bugs Bunny seems timeless!
In December, I hosted a dinner for some of our college students with food allergies. When shopping for the dinner, I saw these beautiful organic baby carrots and Balsamic Glazed Carrots became the star side dish for the dinner. These are super easy to make and super delicious. Heck, even those that don't like eating their vegetables will like these!
Balsamic Glazed Carrots
3 pounds baby carrots, cleaned and stems removed
1/2 cup (1 stick) butter or dairy-free alternative (Earth Balance works well)
6 Tbsp sugar
1/3 cup good quality balsamic vinegar (I use an 18 year aged balsamic)
Pinch of sea salt and white pepper to taste
Melt the butter in a large pot over medium-high heat. Add carrots and sauté for about 5 minutes. Reduce heat to medium, cover and cook, stirring occasionally for about 7 more minutes. Stir in vinegar and sugar. Cook uncovered, stirring frequently, until carrots are tender and glaze is thickened, about 12 minutes. Season with salt and pepper and serve.
